    Apple-Ginger Jam

    “Apple Jam That Will Keep For Years” (Apple-Ginger Jam)

    Adapted from “The Kansas Home Cook-Book” by the Ladies of Leavenworth (1874)
    Mrs. Grafton of Wyandotte wrote for the original recipe: “Have good sour apples, pare, core and chop them fine: take equal weights of good brown sugar and the apples, and add the juice and grated rind of three lemons and a few pieces of white ginger; boil it till the apple looks clear and yellow. This resembles foreign sweetmeats. On no account omit the ginger.”

    Ingredients
      

    • 8 Granny Smith apples peeled, cored and chopped
    • Juice and zest of three lemons
    • 2 pieces of peeled fresh ginger 1-inch
    • About 2 cups brown sugar

    Instructions
     

    • Cook the apples, lemon juice and zest, ginger and brown sugar on medium low in a large pot, stirring frequently, until the apples are translucent and breaking down and the mixture has thickened. Keep in a sealed glass jar or container in the refrigerator.
