
Blackberry Crumble Bars
Ingredients
Crust and Topping
- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- ½ tsp. baking powder
- ¼ tsp. salt
- ½ cup unsalted butter
- 1 large egg beaten
Blackberry Filling
- 2 cups blackberries
- ½ Tbsp. lemon juice
- 1 Tbsp. cornstarch
- ½ cup granulated sugar
Instructions
- Preheat oven to 375 F. Spray 9x9-inch baking dish with nonstick cooking spray.
- In a medium bowl, whisk together the flour, ½ cup sugar, baking powder and salt.
- Cut in the butter using a pastry cutter to form pea-sized pieces.
- Stir in the beaten egg with a fork, just until dough begins to form a ball.
- Press half of the mixture into the bottom of prepared pan.
- In another medium bowl, toss blackberries gently with lemon juice, cornstarch and remaining ½ cup sugar.
- Scatter the sugared berries over the crust in the pan and sprinkle remaining half of dough over berries.
- Bake for 35-39 minutes, or until lightly browned. Cool completely and cut into bars.
