    Blackberry Crumble Bars

    Blackberry Crumble Bars

    Ingredients
      

    Crust and Topping

    • 1 ½ cups all-purpose flour
    • ½ cup granulated sugar
    • ½ tsp. baking powder
    • ¼ tsp. salt
    • ½ cup unsalted butter
    • 1 large egg beaten

    Blackberry Filling

    • 2 cups blackberries
    • ½ Tbsp. lemon juice
    • 1 Tbsp. cornstarch
    • ½ cup granulated sugar

    Instructions
     

    • Preheat oven to 375 F. Spray 9x9-inch baking dish with nonstick cooking spray.
    • In a medium bowl, whisk together the flour, ½ cup sugar, baking powder and salt.
    • Cut in the butter using a pastry cutter to form pea-sized pieces.
    • Stir in the beaten egg with a fork, just until dough begins to form a ball.
    • Press half of the mixture into the bottom of prepared pan.
    • In another medium bowl, toss blackberries gently with lemon juice, cornstarch and remaining ½ cup sugar.
    • Scatter the sugared berries over the crust in the pan and sprinkle remaining half of dough over berries.
    • Bake for 35-39 minutes, or until lightly browned. Cool completely and cut into bars.
