    Homemade Vanilla Extract

    Homemade Vanilla Extract

    I stopped buying vanilla extract when I discovered how easy it is to make it yourself. It can be used about three weeks from when it is made, but darkens and becomes more flavorful the longer it sits. Gift someone some homemade vanilla (or lemon) extract (add a label and tie it up with a ribbon). Or share this simple recipe with them.

    Ingredients
      

    • 10 large vanilla beans cut in half (so you will have 20 individual pieces)
    • 4 cups unflavored vodka
    • 4 clean 8-ounce jars with tight-fitting lids

    Instructions
     

    • Using a sharp paring knife, spit the vanilla beans down the center to expose the caviar. Place five of the vanilla bean halves in each jar. Fill each jar with vodka, just shy of the top, so there is a little air space. Seal the jars tightly and place in a cool, dark cupboard or pantry. Shake the jars every few days. For lemon or orange extract, use a vegetable peeler to slice long strips of lemon or orange peel. Place several pieces of the peel in each jar and fill with vodka. Allow to cure at least 3 to 4 weeks.
