    Spring Lemon Cookies

    Spring Lemon Cookies

    These Springy Lemon Cookies look and taste like spring with their colorful sprinkle exterior and chewy, lemony interior!

    Servings 16 cookies

    Ingredients
      

    • 1 box lemon cake mix
    • 1 box instant lemon pudding mix 3.4 oz.
    • 1 egg
    • 2 ¼ cups whipped topping
    • Colored sprinkles

    Instructions
     

    • Preheat oven to 350 F and line baking sheets with parchment paper.
    • In a large mixing bowl, combine the cake mix, pudding mix, egg and whipped topping; stir until smooth.
    • Drop by large spoonfuls into a bowl of colored sprinkles; use a spoon to get sprinkles on all sides of the ball of dough (dough will be sticky!).
    • Place sprinkle-coated cookie dough balls onto prepared baking sheet.
    • Bake for 10-12 minutes or until a very light golden-brown color around the edges of the cookies.
