    Baked Sweet Potato Fries with Lemon Meringue Dipping Sauce

    Baked Sweet Potato Fries with Lemon Meringue Dipping Sauce

    Ingredients
      

    Sweet Potato Fries

    • 3 large sweet potatoes peeled and cut into matchsticks
    • 2 Tbs. olive oil
    • 1-2 tsp. kosher salt

    Dipping Sauce

    • 3/4 cup mayonnaise
    • 1 clove garlic finely minced
    • 1 lemon zest
    • 1 Tbs. lemon juice freshly squeezed
    • 2 Tbs. flat leaf parsley

    Instructions
     

    • Preheat oven to 450 F and line a baking sheet with parchment paper. Peel sweet potatoes and slice into matchsticks, roughly the same size. Place in a large bowl and toss with olive oil and salt.
    • Bake for 20 minutes on the parchment-lined baking sheet, tossing halfway through to crisp both sides.
    • While fries are baking, mix together mayo, garlic, lemon juice, lemon zest and a pinch of salt. Once fries are done, garnish with parsley and serve with lemon meringue dipping sauce. Serves 6.
