    Ingredients

    • 2 cups water 2/3 cup can be milk or apple juice, if desired
    • 1/4 tsp. salt
    • 1 cup rolled/old-fashioned/whole oats thick-cut preferred, NOT quick-cooking
    • 1/4 cup dried fruit raisins, cherries, cranberries, dried apples, chopped dried apricots, etc.
    • 1/4 tsp. cinnamon optional

    Instructions

    • Bring water and salt to a boil over medium heat; add oats, dried fruit and cinnamon. Reduce heat to low and simmer 10 or more minutes, depending on desired consistency, stirring occasionally. (If cooking steel-cut or other whole grains, it may take longer to cook—follow package directions). Turn off heat, cover and let steep for at least two minutes. Top simply with butter, sweetener (brown sugar, honey, maple syrup) and milk, or try one of the topping ideas presented on Page 25. Makes 2 servings.

    Notes

Note: For best results, do not skip adding salt, cook the oats long enough and allow
    them time to steep.
