    Fried Catfish Sandwiches with Lemon-Pepper Mayo

    Fried Catfish Sandwiches with Lemon-Pepper Mayo

    Ingredients
      

    Lemon-Pepper Mayo

    • 1/2 cup mayo
    • 1/2 tsp. lemon zest
    • 1 Tbs. lemon juice
    • 1/2 tsp. freshly ground black pepper
    • pinch of salt
    • pinch of cayenne pepper
    • 1 Tbs. finely chopped chives optional

    Catfish

    • 1 to 1-1/2 pounds catfish fillets cut into four large pieces
    • 1 cup your preferred seasoned flour/fish fry coating mix I like Ensley’s Seasoned Coating Mix, or make your own by combining 1 cup flour, 1 tsp. celery salt, 1/2 tsp. pepper, 1 tsp. paprika, 1 tsp. garlic powder, 1 tsp. salt
    • Vegetable oil peanut or canola for frying
    • 4 ciabatta or French rolls split and toasted
    • Butter lettuce or baby greens

    Instructions
     

    • In a small bowl, mix together all the ingredients for lemon-pepper mayo, cover and store in the refrigerator until ready to use (this can be made one day ahead). In a large skillet on medium-high, heat canola or peanut oil (filling the pan to at least 1/4-inch depth). Rinse and pat dry the catfish fillets; season both sides with salt and pepper, then coat evenly and completely with seasoned flour mix. When the oil has reached 300 degrees, place fillets in the skillet and fry for several minutes on each side, until golden brown. Fish can be placed on a paper towel-lined sheet and kept warm in the oven. Assemble sandwiches by spreading each half of the toasted roll with lemon-pepper mayo. Place one piece of fish on each half; top with baby greens and the other half of the roll. Serves 4.
