    Ingredients

    Cake

    • 1/2 cup sugar
    • 3/4 cup flour
    • 1/4 tsp. salt
    • 1 packet hot chocolate mix
    • 1/2 tsp. baking soda
    • 3 Tbs. shortening

    Frosting

    • 2 cups powdered sugar
    • 1 package hot chocolate mix
    • 2 Tbs. instant nonfat milk powder
    • 2 Tbs. butter-flavored shortening
    • 1 Tbs. cocoa

    Instructions

    • Frosting Directions:
    • Combine powdered sugar, hot chocolate mix and milk powder in a medium bowl. Cut in shortening. Store frosting mix in an air-tight container or in small storage bags. Store in a cool dry place. TO MAKE FROSTING: Combine 1/3 cup mix with 2 tsp. water. Stir with a spoon until smooth Add additional water to reach desired consistency. Will frost approximately four single layer cakes.
    • Cake Directions:
    • Combine all ingredients. Store mix in an airtight container. To prepare cake, mix 1/3 cup mix with 5 tsp. water. (Fill greased-and-floured pans half full of batter for best results). Bake for 15 minutes. (NOTE: Oven times may vary. If not baking in a toy oven, cake can be baked in a standard oven at 350 degrees.) Frost cake with Hot Chocolate Frosting and serve.

    Notes

Turn a rainy afternoon into a baking session with these homemade mixes for mini chocolate cakes and frosting. Use child-size, oven-safe baking pans, muffin or mini muffin pans for the best results.
